As of October, Filtered Coffee has come under the leadership of Jacob Honescko, who brings both experience and confidence to the position. Jacob’s older brother, Joey, owns the bookstore just a few doors down, making Louisiana Street a true Honescko family hub.
Originally from California but a long-time McKinney resident, Jacob was a regular at Filtered Coffee. When he heard through a rumor that the previous owner, Desiree Rene-Hlavenka, was looking to sell, he reached out to her with an offer, backed by investors. Now, at just 24 years old, Jacob is leading the oldest coffee shop on the square, a responsibility he seems to handle with ease.
“I know what it takes from when the coffee is green to when it gets to the customer,” Jacob told Local Profile. “That education helps me explain to customers that it’s not just a cup of coffee: there’s a farmer, a roaster, an importer. There are a million steps before we hand the cup to the customer.”
Despite his youth, Jacob is no stranger to coffee. He has barista and management experience from 1418 Coffee in downtown Plano and roaster experience at Buzz and Bustle, a North Dallas shop in The Village. These past roles have prepared him well for the demands of Filtered, which shares traits with his previous jobs, such as a focus on quality, baked goods, and high traffic.
