Fairfax City will soon welcome a new spot for coffee and pastries. Layered, a café from the team behind Chateau de Chantilly bakery, is planning a soft opening in mid to late July 2025, according to Fairfax City Economic Development.
The café will open in the former McDonald’s building at Courthouse Plaza.
While the full menu is still under wraps, Layered is expected to serve coffee, pastries, desserts, cakes, and artisan sandwiches crafted by a Michelin-trained chef.
“Our vision is for this to be a place where people come together—whether for a casual coffee catch-up, a family treat, or simply to enjoy something special,” said co-owner Choi.
Choi, who also co-owns Chateau de Chantilly, is launching Layered with business partner Jae Lee. The two are longtime friends and graduates of George Washington University.
“We are incredibly excited to finally welcome the community through our doors this summer,” Lee said in a press release.
Layered aims to become a new favorite destination in Fairfax for locals seeking high-quality coffee and handcrafted desserts.
